My cute sister in-law sent me this yummy recipe for chicken tacos. So I tried them out last night for dinner.
1 1/2 lbs chicken cubed
1/8 C red wine vinegar
1/2 Lime, juiced
1 teaspoon white sugar
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 green onions, chopped
2 cloves garlic, minced
1 teaspoon dried oregano

1 tomato, diced
Shredded lettuce, cheese, salsa

Sauté chicken in saucepan over medium heat for about 20 min. Add vinegar, lime juice, sugar, salt, pepper, green onion, garlic and oregano. Simmer another 10 min.
They were so good and healthy! I used Lynn Wilson corn tortillas and they only have 40 calories, and 9 carbs each! Way better then flour tortillas :) I loaded mine up with chicken, lettuce and lots of salsa and indulged.
I downed them in no time, you must try them out!
Today I ran 3.2 miles in 38 minutes.
Tonight I am doing Yoga and attempting a Zumba class it should be VERY interesting!
Given the fact I have ZERO coordination ;)

Boy do those look good. Just got out of a series of meetings that made me miss lunch completely, and those tacos are speaking to me. Healthy and tasty - I'll definitely give these a try.

my family totally uses the corn tortilas they are so much better for you. I have been going to zumba and I also try and hit aerobics 3 times a week with the girls in my ward (in my church) but ZUMBA is my fav. I even went last night and I love it. KEEP IT UP GIRL! jenn

I love corn tortillas... once you get used to them you'll never go back to flour!!!

Try mahi mahi tacos. I cube it and cook it in a frying pan. I do roll it in some spices (usually curry, cinnamon, and salt and pepper), but I forgo breading and oil. I put tomatoes, lettuce, and salsa on a corn tortilla. They are fabulous!! I love your blog Lindsay

Mmmm I love me some tacos!! Since going veg I've been using tempeh crumbles instead of meat as a filling...I'll bet this recipe would still work great with that though~

I can't wait to hear about your yoga experience. I have always wanted to take a class, but have never gotten around to it. I think I have avoided it, because I am SO inflexible! Running keeps my muscles super tight!
I had taco salad for dinner last night with Morning Star grounds. I must admit though, your chicken soft tacos look SO much better. HA! Yeah, that's right, I'm jealous! :)
