Whole Wheat Banana Bread
  • 1/3 cup unsweetened applesauce
  • 1/2 cup honey
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 cup mashed bananas
  • 1 3/4 cups whole wheat flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/4 cup hot water
  1. Preheat oven to 325 degrees F (165 degrees C).
  2. In a large bowl, beat applesauce and honey together. Add eggs, and mix well. Stir in bananas and vanilla. Stir in flour and salt. Add baking soda to hot water, stir to mix, and then add to batter. Spread batter into a greased 9x5 inch loaf pan.
  3. Bake for 55 to 60 minutes. Cool on wire rack for 1/2 hour before slicing. 


Tasty Chicken 

  •  1 1/2 lbs chicken cubed
  • 1/8 C red wine vinegar
  • 1/2 Lime, juiced
  • 1 teaspoon white sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 tomato, diced
  • Shredded lettuce, cheese, salsa
  • Corn Tortillas 
  1. Sauté chicken in saucepan over medium heat for about 20 min. 
  2. Add vinegar, lime juice, sugar, salt, pepper, green onion, garlic and oregano. Simmer another 10 min.
  3. Serve over corn tortillas 
  4. Enjoy!!
